Roast Vegetable and Quinoa Salad

This roast vegetable quinoa salad is one of the simplest yet most delicious dishes in my repertoire. 

I simply begin by peeling the vegetables of my choice, slicing them into small pieces and roasting them in the oven (with a little bit of olive oil) until they are lightly browned with a slight crisp on the outside.

While the vegetables are roasting I cook my tri-coloured quinoa (or any variety that I have in the cupboard) according to the instruction on the packet - this usually takes around 15 minutes.

To add some flavour I cook the quinoa with some vegetable stock - this also means that I don't need to add any dressing to the salad.

Finally, I toss the roast vegetables through the quinoa and voila - there you have it - a delicious roast vegetable quinoa salad.
